Dairy and deli: everything is sustainable

Everything, in Tommaso Carioni’s workshop at the Mercato Centrale Milano, must be tasty, traceable and sustainable.
The Carioni family business started in 1920, with 7 cows and a few hectares of land. Much has changed since then, but the values have remained the same: passion in the work, authenticity of the produce, and the desire to preserve traditions and seize opportunities. Tommaso, along with his siblings Mario and Tiziana, belongs to the third generation, the one that transformed the small family company into a significant business on the circular economy model: the siblings turn produce from the land into food that can be brought straight to the table. Like the organic milk that the workshop uses, collected every day and worked with craft techniques in the dairy, a mere 50 metres from the cows that make it. The milk is 100% natural, without preservatives or whiteners.
This is why the workshop’s cheese really tastes like cheese, and why all its products – from fresh milk to yoghurt – are traceable, healthy and genuine. They are as good for the soul as they are for the body.
