In Tuscany, people often say that a truffle gatherer is a hunter manqué. And indeed, Cristiano Savini’s grandfather was not a good hunter, but he loved delving into the woods nonetheless. Rather than bringing home hares and pheasants, he would return with superb truffles that he had gleaned from the soil and undergrowth, a skill that he passed on to his son. That skill has lived in the family since the 1920s, and is undiminished today. Today, the Savini business accounts for around 650 truffle gatherers in the provinces of Pisa, Florence and Siena, and even earned a Guinness World Record for the biggest white truffle ever put on sale. Every dish in the workshop makes use of special combinations and contrasting tastes, but smell is the most important sense here. Every dish can be identified by the nose alone. Here, truffles have an aroma like none you’ve smelt before.
