There’s a great variety of fish at Pedol’s Bistrot in the Mercato Centrale Milano. There are two rules: it must be in season, and of the highest quality.
Here chef Franck Businelli sources the ingredients for his fish kitchen from one of Milan’s historic fishmongers, Pescheria Pedol, which since 1929 has been famous for the quality of its products. Franck turns his considerable experience to good use, transforming these freshest of fish into godsmacking, lip-smacking dishes.
The watchword of this bistrot is variety. The menu changes according to what’s available at the fish market and what’s in season. There is no better guarantee of freshness and goodness: these dishes have to be eaten in the moment.
