For Dario Giliberto artichokes represent tradition, “romanità”, and quality. The vegetable delicacies in his shop are all exceptional.

Dario Giliberto is Sicilian by birth but Roman by adoption. He worked abroad for several years before returning to Italy, first to Florence and then to Rome where he fell in love with the local cuisine. One product above all steals his heart: the artichoke!

The Roman artichoke culture immediately captured Dario’s attention and he began to carefully study the preparations of the culinary tradition. Tradition has become his mantra and it is the starting point for the history of his shop.

Dario has been collaborating with Veg & Veg since 2016. It is here that he learned the secrets for creating delectable vegetable dishes, which he now brings to his menu in the name of simplicity and authenticity.
In addition to the classic artichokes alla giudia and alla romana, Dario’s shop offers soups with seasonal vegetables, vegetable meatballs, parmigiana, lasagna, savory pies, and a spectacular mix of vegetables.
